In 1972, Javier Prado left his hometown in Michoacan Mexico in pursuit of the great American dream.
Arriving in Los Angeles with no money, family or friends, Javier quickly landed a job as a dishwasher at the Beverly Wilshire Hotel.
Although the job lasted only two weeks, it was there where Javier was first introduced to the world of culinary
